After three years, I’d say we’ve got this Wisconsin State Fair thing down pat.

We were rookies during our first visit in 2024, and it showed. For starters, we went on a Saturday…and ran into a traffic jam so long, it took us an hour to travel the last mile. And then, we wandered around aimlessly, without a plan. I’m all for spontaneity (err…sometimes), but when it comes to navigating the nearly 200 acres that comprise the West Allis fairgrounds, you really need a strategy. We never saw the Exposition Center and its hundreds of shopping vendors, walked blindly past the Grand Champion Hall housing prize-winning exhibits. Even our food choices were willy-nilly that first year. I got a freakin’ potato pancake, if you can believe that shit.

Last year, we were smarter. We decided to go in the middle of the week to beat the crowds and traffic. And we started paying more attention to the Sporkies and Drinkies…the silly-named-but-always-intriguing food and beverage competition that highlights unique, creative, and unconventional menu items from fair vendors. Why settle for a plain ol’ corndog when you can get a golden, flaky puff pastry filled with tender pulled pork, zesty peach filling, layered with creamy garlic and herb cheese, and finished with a drizzle of hot honey and a sprinkle of mustard seeds instead?

Yesterday, we made our annual pilgrimage to the fair. Again on a Wednesday. There’s a lot to be said for breaking up the work week that way! It feels like a mini weekend. And this time, we focused almost exclusively on the Sporkies and Drinkies winners and finalists.

The fair’s always about the food, right?

Left to right: the Cream City Cone (a warm, buttery pretzel shaped like a cone, dipped in dill pickle mustard, packed with a savory mix of bratwurst, sautéed onions and mushrooms, and melted cheddar, and topped with a breaded white cheddar cheese curd); Al Pastor Pizza (marinated al pastor pork, mozzarella cheese, pineapple, cilantro, onion, lime, and a signature special sauce), and Sweet Lemon Berry Cheese Curds (fried white cheddar cheese curds tossed in a cinnamon-sugar mix with a raspberry sauce and a side of sweet lemon zest whipped cream).

Holy hell. All three were really good, but we both agreed the curds were the best thing we put in our mouths yesterday. It’s an odd combination that shouldn’t work, but somehow, does. Sweet, savory, and crispy. Every box was checked.

With so many foods to try, including the Porky Puff, we shared everything. And still didn’t get around to the Birria Flamin’ Bombs, Deep Fried Horchata Balls, Bayou Crunch Cup, Color-Changing Swamp Juice, Hot Honey Chicken Lemonade, Deep Fried Ranch, Soft Serve Beer (I’m dead serious), or dozens of others. One only has so much room in one’s stomach! You really have to pick and choose, which is why I spent an hour researching the choices ahead of time, even dipping into Reddit reviews, to map out a culinary game plan. Literally: I all but drew a map. I can’t help it; I’m a planner at heart.

Total splurge day, as it always is…but we also logged 15,000 steps just walking around the immense fairgrounds. In the heat and humidity, I might add. Luckily, there were cold beers and canned cocktails to help.

One thing that separates the Wisconsin State Fair from the Jefferson County Fair: the talent is much higher. Remember how I’d planned to submit a couple of photos in the Open Amateur Photography category at the JeffCo Fair but missed the deadline? Scoping out the entrants the day we visited, I was convinced I would have had a real shot at a blue ribbon. At the State Fair? Not so much. There were some truly exceptional photographs submitted. I’d be lucky to snag an honorable mention.

About the only downside was the muggy weather. At least it didn’t rain, like it is today…guess we dodged a bullet there! Regardless, we spent a solid six hours at the fair, and might’ve stayed longer if we weren’t drained and it wasn’t a “school night.” Tara suggested we go in the evening next year, and I’m not totally opposed to the idea. It would be a whole different vibe, and seeing everything lit up after dark, all the bright lights and flashing neon, would be fun. But it would also be more crowded and traffic-y, so we’ll see how we feel about that 52 weeks from now.

Now that our annual State Fair trek is complete, it feels like summer is winding down. Granted, it doesn’t truly end until Labor Day weekend–the Taste of Madison always feels like the last big hurrah–and we have lots more outdoorsy stuff planned, but the signs are there. It’s dark(ish) again when I head out on my morning walks, and. tomorrow is our last 8:00 sunset. Tara’s harvesting tomatoes left and right, and our lightning bugs are all but gone now (sniff).

Sadly, I can’t say the same about the mosquitoes.

  2. I could go for a slice of that pizza. It’s been ages since I’ve had pizza… Of course I always had to get a traditional fair scone, and a burger with fried onions. I sort of grew up on those so…
    Did you not visit any livestock? The horse barns, the petting zoo, the pigs with (hopefully new babies), anything?? The smell of hay and manure is the best part of a fair IMO.
    School has started here so in my brain it’s already fall- even though it’s not. The rain and thunder storms are helping though. Now if the leaves would just start changing colors…

    2. Oh, we saw some livestock, too! Walked through the pig barn and caught the tail end of a hog contest. Also visited the sheep and goats, though there were way more sheep than goats. I’d have preferred it the other way around.

      School is already in session there?! That seems odd. It was always right after Labor Day, both when I was a student and when my kids attended.

  4. I’m with Deb. A pizza with pineapple, cilantro, and lime sounds amazing! I’m intrigued by the fruity cheese curds… is that something you’d read positive reviews about, or were you just feeling adventurous? I don’t think I’ve gotten food at a state fair, just because my belly does not tolerate fried foods, which is basically fair fare 😂

    The weather is dropping below 110 and monsoon season has arrive with heavy rain and thunderstorms, so it finally feels like summer is easing up and making way for fall.

    1. I probably wouldn’t have tried the fruity cheese curds if not for the very positive reviews. Despite my love for curds, I’ve never considered trying a sweet version before. They were surprisingly good.

      Only in your neck of the woods is “dropping below 110” synonymous with fall!

      2. The best part about the curds? The story is, they were an accident. Chef was prepping, accidentally knocked a cheese curd into a bowl of cinnamon sugar, and the rest is history kind of thing. Classic case of “Your chocolate’s in my peanut butter/No, your peanut butter’s in my chocolate!” (You might not be old enough to get the reference, but trust me, it’s on point.)

        He’s doing well, thanks for asking! Spending lots of time in the pool at his apartment complex. And he said the oven mitts have actually come in handy!

  5. I’m very interested in those curds! I’m not sure I’ll make it to the Fair this year unless I can find a free ticket. I’ve never paid to get in or for parking and won’t start now. I grew up here and feel somewhat entitled since I have to deal with the traffic congestion downtown. John and I usually buy scones under the grandstand. There are always some gimmicky foods (not rated though, I think?) but they’re generally deep fried and we stay away from that. I remember that the Iowa State Fair had some winning foods and an Apple slushie drink that I fell in love with. There were so many foods on a stick like a COMPLETE PORK CHOP. I had a Caprese salad on a stick. My son-in-law had a pickle beer. I like beer and pickles but that was a firm no for me.

  8. 15,000 steps logged…but for me I gotta take into consideration the potential for 15,000 calories. I don’t know how I would restrain myself around all of that food. The pizza…yes! We have local fairs here, but I don’t think they rise to the level of this one. Funnel cake is a staple at them, of course. I do agree going at night would be a different vibe, but you probably enjoyed yourselves a lot more attending when you did. That guy does look like he has something to “discuss…”

      We struck up a conversation with another guy who had just ordered the curds. He said Wed. was his third day in a row at the fair…he was basically eating his way through everything. I can see a one-day splurge, but multiple days ingesting all that food, delicious as it would be? Too much!

      1. I read an article once which approximated how many calories different carnival fare has in it. Not for the faint of heart…or anyone’s heart for that matter. Three days in a row? I am surprised curd dude was still standing!

  9. Excellent post with some tasty writing (your sentence flow was excellent and descriptions made me hungry – mmmm)
    So the curds were the big winner for the layers and taste – it reminds me of when we had some amazing curds in Ontario from a food truck
    I was shopping with my niece and sister and we weee famished and so to be honest the curds could have been below average but we were so hungry and it made them extra good
    I like the funnel cakes and Philly cheesesteaks used to be what we’d get back in the 80s
    But the food at your Wisco fair! Oh my goodness does it sound too notch!

    1. I’ve only had a funnel cake once in my life…only because there are so many other interesting choices! It was really, really good, though. But I was saving room for the Original Cream Puff…the grand finale of our fair experience every year.

  10. You may start a whole new trend with taking a midweek day off. A four day work week sounds pretty good. Yeah, I think somebody needs to work on the marketing plan and come up with something better than porky puffs, although they look pretty good.

    1. I will always default to taking a Friday off (or Monday in a pinch), just to have a longer weekend…but there’s a lot to be said for Wednesday PTO. The week just feels so much shorter, ’cause look–it’s already Friday!

  11. Now that you two are no longer WISCO state fair virgins and you’ve ‘been around the block’ a bit, you’ve kicked it up a notch. A lot of those food combos sound disturbing, like someone created them in a fever dream, but it does not keep them from being delicious! I want to try the hot bomb thing!

  12. I’m vegetarian (oh wait, just remembered I never answered your question, which is NO, I have never had poutine! Our national dish, right behind maple syrup, which I HAVE had. Anyway, never had poutine, and I’m not a huge fan of fries. Sweet potato fries I love, although if there was nothing else I WOULD eat regular fries, but I would need a lot of ketchup, and I would need it on the side, and my name is actually Sally Allbright). Where was I GOING with this? *scrolls up to see question* oh yes! Fair food. I mean, mostly it’s meat so I don’t partake BUT I do like me a sno-cone. Canned cocktails are an underrated beverage. Bring it on!

  15. I don’t like fried food, so fair food has never appealed to me. But I have to say I’m intrigued by the porky puff and the pizza. Both look and sound delicious. They had soft serve beer?? That sounds terrible! Did you see any interesting chickens? That’s what we’ve enjoyed the most at county fairs.

  16. I love an elephant ear at a fair, but funnel cakes seem to be more popular here. Have you ever been to the Minnesota State Fair? It’s AMAZING. You have to see it to believe it. You should try to get there sometime.

  17. Yes, I’m heading to New Mexico soon for a final week of rest and relaxation before the school year begins.
    As you have spent several years improving on the previous year’s state fair-going, I think you’re ready for the next step next year: do as many people I know do with the MN State Fair and go not once, but twice! Maybe a day visit and later an evening visit? You’d get a chance to eat more food!

    1. So many people keep recommending the MN State Fair, I’m truly curious! It’s not in the cards this year, though…and actually, next September, we’re planning a big trip to the Northeast, so it’ll probably be a while before we make it out there. But it’s on our bucket list!

      But yeah…two visits to the WI State Fair is totally doable.

  18. Soft Serve Beer? WHAT IN THE ACTUAL HECK?

    I’m giggling at the term Sporkies & Drinkies—it has a nice ring to it!

    It’s been years since I’ve been to the fair. As kids, we enjoyed the South Florida Fair, held in West Palm Beach each year, usually in January. We went with our school, and I could not wait for a Corn Dog each time. I believe my taste has changed somewhat, and I’d probably be looking at something other than a boring old CD.

    I saw last night how on the last night of the fair, there were fights/attacks, with a lot of innocent people being accosted and police being attacked. Scary AF.

    1. Well, Wisconsin is known for both soft serve ice cream (custard, really) and beer. It seems like a match made in heaven. I was holding out for the cream puff, though. One can only have so many sweets.

      Unfortunately, there were some unruly fairgoers in the closing hours of the fair. Way to ruin it for everyone! It makes me a little more inclined to stick to our daytime routine, but we shall see.

  21. Oh man, that all sounds delicious! Especially the porky puff. The first time we tried to go to the Wisconsin State Fair, I was pregnant with Anna, and we ran into the same thing you did your first time… one hour in traffic to go maybe one block in West Allis? We gave up and went home.

    We went again when the kids were younger and had a much better time. I agree that going in the middle of the week is much more enjoyable.

    Here’s a hurrah to the end of summer being near. It’s bittersweet -I do love the light, but I’m done with this heat and humidity.

      I’m glad the heat hasn’t been too bad lately. The humidity is another story, but once the corn is harvested, it should feel a lot better. I personally don’t mind the darkness; I find it cozy!

  22. OK, those food choices are amazingly varied, and I’m impressed at your research and planning. Quite right too – no Taurean wants to miss out on the best food options just because they didn’t put a little effort into working out what they were likely to be!

    My Mum lived near the South of England show which is pretty much on a par with your State Fairs I guess, except she refused to allow us to come and stay and park there when it was on, as she insisted we spend *all* our time with her, and not just the evening after the show. So, as the traffic jams are too horrendous (it’s held in a small village with small windy rounds (all single lane), we never did get round to it. I’ll just live vicariously through you 🙂
