One evening during my parents’ recent visit they wanted a salad, so they bought a Fresh Express salad kit. When my mom was ready to make it, she asked for a bowl and tongs.

“You don’t need any of that stuff,” I told her. “Just use the bag!”

She and my dad looked at me uncomprehendingly, so I told them to gather ’round for a demonstration. I opened the bag of lettuce, fished out the croutons and dressing, and dumped the contents of those packages into the main bag. I then secured the top and gave everything a good shake for about 30 seconds.

You should have seen their faces. I don’t use the term dumbfounded lightly, but that about describes it.

“I never thought of doing it that way!” my mom said. “You’re a genius!”

I’ve always suspected as much.
(Not really, but I appreciated the compliment.)

This – and blogger Deb Carey’s admission that she loves kiwi fruit but hates peeling the skin – got me to thinking. I assumed that most kiwi eaters simply slice the fruit in half with a knife and scoop out the flesh with a spoon, much as I’d taken it for granted that all salad kit connoisseurs do in-bag prep. Apparently not! Could it be, I wondered, that I am missing out on some efficient, time-saving kitchen shortcuts, too? So, I googled cooking hacks. There were a lot of basic tips I already knew, but a few stood out:

  • Microwave your corn for 30 seconds to a minute on high heat to make shucking a breeze. Corn on the cob is delicious, but removing the husks (and especially the silk, which clings to the cob like an insecure lover) is a total pain. I’ll be trying this for sure!
  • Lower eggs to room temperature in a bowl of warm water for a few minutes. Just last week I was making a recipe that called for room temperature eggs but hadn’t planned ahead, so I used them cold, straight out of the fridge. The meal turned out fine, but: duh!
  • Hull a strawberry by inserting a drinking straw into the tip of the berry and pushing it through to the other end. Seems a lot easier (and less messy) than trying to pull the stem out with your fingers. And it won’t look like you just walked away from a bloody crime scene without washing your hands like a bumbling murder novice.
  • Slice herbs with a pizza cutter. Bunch them up and push the wheel back and forth in all directions until you’ve reached your desired consistency. Heck yeah! Less risk of chopping a finger off that way too.

My favorite cooking hack is one I’ve blogged about before. I love meatballs, but perfecting the seasoning is hit-and-miss. Half the time, they’d come out too bland. Nowadays, I make a tiny test meatball first, maybe the size of a quarter. I fry it up and taste it, then adjust the seasonings as needed. This also works well for meatloaf.

It’s (about to be) a jungle out there

I hope I get my John Deere back from the shop soon, because my grass is about to go wild. We had a lot of rain over the past few days (2″+); both Tuesday and Wednesday were in-office days, so my windshield wipers got quite the workout driving to and from Madison, and then to and from Madison again. Good news for all the farmers and their freshly planted corn, at least. Corn that is going to be a cinch to husk this summer!

If not, well, let’s hope Neighbor Brian is in the mood for more chili verde.

It’s also been cold. Didn’t get out of the 40s for two days straight. We almost hit 90° a week ago, so this felt especially jarring. I briefly contemplated building a fire in the wood stove on Tuesday, but that just felt wrong so late into May.

The (long – yay!) weekend’s looking pretty nice though. Sunny and 60s. Tara’s going to get all her plants in the ground to officially kick off gardening season, so Tomato Countdown 2025 will officially commence.

Other than that, I am 99% sure I’ll be lighting a grill at some point, and 100% certain I’ll be drinking a Bloody Mary.

  1. Husk corn ?, you can nuke corn for 5 min instead of boiling or grilling 😁 also it’s definitely an aquired taste/action but it is safe to eat the entire kiwi skin and all

      I second the corn in the microwave hack. Put it in, husk and all, and microwave on high three to four minutes for one ear, six minutes for two ears.

      However, I get salad kits quite often and not once have I ever thought to mix everything in the bag. Dumbfounded is the appropriate word for how I’m feeling right now.

      1. OK, since you’re both insisting, I’ll try microwaving an ear of corn this summer. If nothing else, it sounds a heckuva lot easier to prepare.

    2. We sometimes grill corn in the husk. I prefer boiling, though – there’s less of a charred flavor that way. I can’t imagine eating a kiwi skin though!

  3. I’ll never forget the first time I watched Tracy use a handheld fruit juicer. You know, the kind you put half a lemon in and squeeze together like pliers? Magic, I tell you!

    We’re boondocking off the Green River for the holiday, trying to avoid the crowds in campgrounds. More likely we’ll get swamped by guys pulling in and parking right next to us so they can go fishing.

    1. I’ve got one of those juice squeezers, and yeah, it’s pretty awesome! Pretty much the best way to get the juice out of a lemon without worrying about the seeds. Plus, if you ever wake up in the middle of the night to an intruder in the house (not likely in your case), you could use that thing as a weapon!

  5. Okay, I’ll try the salad kit hack, but does the back of your hand get sort of salad dressing-y when you stick your fork in there to the bottom? I’ll tell Hubby regardless. This will be helpful when a coworker occasionally takes his salad bowl.

    Def wanna try the corncob hack. (I made that one word for you.) Never knew a recipe called for room temp eggs. I wonder what difference it could make. I protest about the strawberry straw thing b/c then you loose out on the fabulous red tip, which is the best part.

      1. No, I don’t really measure much for baking. Like, I’ll use the right size measuring cup for flour, but I don’t sift it or do the knife thing to level it off. We are grilling steak and salmon burgers or shrimp I think.

  8. I re-wash the lettuce because I’m a distrustful type, especially about romaine. So, it has to come out of the bag. Otherwise, it’s a genius idea. My boyfriend does the corn hack.

    1. The funny thing is, I rarely buy salad kits anymore. I’ve got a salad spinner, and use that to wash off my green leaf lettuce. I then put it in a bag with a paper towel to absorb the moisture (another hack!).

    I saw that corncob hack on a YouTube short just yesterday. This guy rolled the entire cob, husk and all in damp paper towels before microwaving. Then he cut the bottom off and squeezed from the top. It pushed that corn right out of the husk with no silk on it whatsoever. Nice hack. Let us know it works out for you.

    I’ve always hated bagged lettuce. I could always “taste” the plastic. 😦 But you are a genius with your salad mixing ways.

    1. Wow, so many people are already aware of the corncob hack. Glad to hear it’s legit! I love corn on the cob, and we have excellent sweet corn around here. (Still a month and a half away, but I’m already salivating!)

      I don’t even buy bagged lettuce anymore…that was my parents’ choice, ha. I prefer a head of green leaf lettuce, my salad spinner, and a plastic bag with a paper towel inside to absorb the moisture (yet another kitchen hack).

      We’ve had fried green tomatoes but never made them. Yes, I do add snacks to my Bloodys, but nothing like you see in some of these bars and restaurants. No sliders or chicken wings for this guy, just a pickle, olives, and cocktail onions!

  11. Wasn’t it McDonalds that did those shaker type salads at some point? I remember they were so full of greens in the cup that shaking did no good. Nothing got mixed.

    and not sure if this is a hack – but we have a ninja ice cream maker (creamery) and we just love making all natural homemade ice cream – we use grass fed cow’s mile, heaping teaspoon of plain vital proteins collagen, monk fruit, and a little vanilla – you can east it plain or add mix-ins – and it is such a treat that is a meal too

    1. I don’t know if it’s a hack either, but it sounds delicious! I had a neighbor growing up who would sometimes make homemade ice cream. Just a big ol’ wooden bucket and a bunch of rock salt. There was nothing else like it though!

  13. I’ve never bought salad in a bag, but shaking does seem appropriate.
    We’ve got a jungle back lawn as well. It’s been raining 5 days a week for two months…. we had ducks fly in. Enough already!

    1. Our first full year here, we suffered through a drought. Last year was extremely wet. This year has been closer to normal – some dry spells, some wet spells.

      I guess that makes 2025 the Goldilocks year.

  14. I’ve bought those Caesar salad bags before and never thought about using the bag to shake the little sachets in to. I’m not sure if ignorance is any better than choosing to willfully do it a less efficient way…? 😉

    Thank you for the pizza wheel herb hack. We’ve only just bought a pizza wheel as neither of us believed it could be better than just using a sharp knife. It was only mid-move when, after packing up the kitchen, Himself cooked pizza and sent me to borrow a sharp knife from our neighbour who insisted on us using his pizza wheel, that we learned that particular lesson. Seems we have much to learn in the kitchen chez Debs & Himself! 😀

  16. I asked my knife-wielding spouse (who wounds himself on a regular basis in the kitchen) if he’s tried the pizza cutter trick. His response: “Yes, but it doesn’t work very well. The pizza cutter is just not sharp enough.” Which probably helps explain all the trip to the ER and our stockpile of butterfly bandages.

  17. I actually learned the salad bag trick from Gilmore Girls—except Lorelai added ranch dressing to the bag and gave it a shake. Genius. Who says TV isn’t educational?

    The microwave corn-on-the-cob thing is new to me, though. I’ll definitely be trying that! We actually roast it in the oven, husks and all, on a cookie sheet for about 20 minutes. Done! Turned out pretty tasty

    1. My coworker is flying to California with his family for a week in San Francisco, Monterey, and Yosemite. He certainly has big plans! I’d be jealous if I hadn’t lived there for eight years…I couldn’t escape fast enough!

  20. Haha. Your story about your parents reminded me of Jerry Seinfeld’s mom: How could anybody not like you?!?! I think an honorary degree from Harvard in Salad Shaking is in your future.
    I’ve used the egg hack before, but we just use a paring knife to hull our strawberries. Oh, and if you don’t compost the strawberry tops, know that rabbits LOVE them, so you can chuck them in your yard (unless, of course, you’re trying to deter rabbits).
    We were so grateful for all that rain. Not for the drastic temperature drop, though. I’ve been wearing several layers at school, because during the heat wave they turned off the boilers, and during the plunge they emailed us to say, “We know it’s freezing in school, but we’ve made the decision to keep the boilers off, so just deal with it.” (I’m paraphrasing there.)
    Long weekend plans: garden, garden, garden! In fact, I’m on the blogosphere now only because it’s a wee bit too chilly out there this early. Just waiting for it to warm up!!!🌸💮🪷🌹🌷🌻🌺

    1. Rabbits and gardens don’t exactly mix, so I don’t think I’ll be chucking any strawberry tops into the yard. The last thing they need is an invitation!

      We have the opposite problem at CheeseGov. The State turns the A/C on and off in May and September (or October) and there have been a few times it’s been excessively warm in the office. It’s all controlled remotely, too. Not like we can fiddle with the thermostat. That certainly wasn’t an issue last week, at least.

      This coming Tuesday/Wednesday are looking cool and wet too.

  22. Do you remember the salad shaker? Or am I thinking of the shaking weight thing? Yeah, I’m prob thinking of the shaking weight, and now I’m trying to get the visual out of my head.

    We don’t eat much corn, but when I do, I cook the cob in the microwave with the husk on. (like three minutes? four?) and it comes out perfectly cooked, and the husk shucks off easy, peasy.

    I’ve learned to make hard boiled eggs in our pressure cooker and they’re SO easy to peel. No fuss, no muss.
